The techniques and safety points this recipe uses, explained from scratch.
Blending hot and cold things safelyShow
Blenders are simple, but hot liquid expands and can blow the lid off.
- Never fill more than halfway, and never more than a third with anything hot.
- Hold the lid down with a folded tea towel and start on the lowest speed, then turn it up.
- Always switch off at the wall before putting a spoon or finger near the blades.
When and how to flipShow
Turning too early tears food and leaves it stuck to the pan.
- Wait until the edges look set and the underside is golden — for pancakes, when bubbles on top stay open instead of filling back in.
- Slide a thin spatula fully underneath in one confident move, then turn it over close to the pan so it doesn't splash.
